Apple Jack Quesadillas

I'm always looking for new easy ideas for snacks and different lunches for my kids and I stumbled across this one in my Rachael Ray Family Cookbook.

Put a little olive oil in a fry pan & start to warm it
Spread pepper jelly on a tortilla (Tabasco brand does not have any High Fructose Corn Syrup)
Put the Tortilla in a pan and sprinkle one side with about 1/2 cup of Pepper Jack cheese
On top of that put about 1/4 of a Granny Smith apple (thinly sliced)
Fold the naked half of the tortilla over and cook for a couple of minutes on each side or until it's brown and crispy and the cheese is melted.

Repeat depending on how much you want to make.

Cut into wedges and serve.

YUM

I'll definitely be trying this one!! I love Pepper Jack cheese, and would never think to combine it with apples, but oh my, yes.
